Homemade Limoncello

A traditional Italian liqueur, limoncello is vodka infused with citrus zest and blended with simple syrup. It can be served on its own (commonly as an after dinner drink) or as a mixer. I like it in sparkling water as a front porch cool down on a hot day.

Adapted rom Dariana Allen’s “Forgotten Skills of Cooking”

25 Lemons

1 Quart Vodka

3c Sugar

Zest lemons and place zest in sterile glas jar. Pour vodka over zest, close lid tightly and set aside in a cool, dark place for 48 hours.

Create a simple sugar by dissolving sugar in 3 1/2 cups of boiling water. Cool and store until infused vodka is ready.

Strain zest from vodka and discard. Combine vodka and sugar mixture and mix well.

For optimum flavor, use within 2-3 months.

Yield 2 Quarts. Recipe may be halved, if desired. Also, I chose to use a blend of lemons and limes to good effect.
