Chow Chow

I never saw chow chow before moving South, but find it is everywhere down here. This relish is made with a wide array of ingredients generally anchored by cabbage and vinegar, but as varied as tomatoes, carrots, peas, beans, asparagus, cauliflower, etc – I suppose pretty much whatever is coming out of the garden. Can be served on its own, but is commonly used as a condiment for hot dogs, burgers and so forth. Crazy hot, crazy sweet or crazy in between, chow chow is in the eye of the beholder.


1 large head cabbage, shredded

6 c white vinegar

4 c tomatoes, chopped

2 c sugar

2 red bell peppers, chopped

2 yellow onions, sliced thin

2 red onions,sliced thin

2 cucumber, chopped

2 stalks celery, chopped

2 small jalapeno, seeded and minced

2 tsp salt

2 tsp celery salt

2 tsp turmeric

1 tsp peppercorns

1 tsp whole allspice

Put all ingredients except tomatoes in a large pot and bring to a boil. Add tomatoes and return to boiling for 15 minutes.

Can in pint jars. Yield 12 pints
