Buttermilk Bog Pie

Tart cranberry puree lurking beneath a sweet, creamy buttermilk custard. I could go on, but I think I’ll just have another piece instead. I may have a new favorite.

RECIPE

Crust

3-2-1 Single Shell

Bottom

1 c Cranberries

1/4 c water

2/3 c Sugar

1 Tbsp Corn Starch

Filling

3 Eggs

1 c Buttermilk

1/2 Butter, melted

1 c Sugar

3 Tbsp Flour

1/2 Lemon, Juiced

1 tsp Vanilla Extract

Dash Cinnamon

Bring cranberries, water and sugar to a boil. Puree using a stick blender.

Whisk corn starch into 1/4 c of water and slowly stir into cranberries. Return to boil and then simmer 5 minutes, stirring frequently. Let cool then spread evenly in bottom of shell.

Whisk eggs and then whisk in all other ingredients. Pour Slowly into shell.

Bake 50 minutes at 375 degrees.
